BACON!!!

Everyone loves bacon! There is a festival in Michigan, on June 1st, that is everything and all things bacon. I heard about it and although it is thousands of miles away, I wanted to participate in a small way. So since June is still so far away, here is a recipe to hold all you bacon-festers over for a while. I will try to put out a good bacon recipe once or twice more to help get @BaconfestMi going strong.

Am I the only one that ever wants to know the background on traditional comfort foods? Well here is one for you trivia buffs.

Hallongrotta (plural: hallongrottor) is the name of a common Swedish pastry. The name means “Raspberry cave”. In the United States they are known as thumb print cookies. It is an easily baked molded cookie, flavored with vanilla. The depressions are usually filled with raspberry jam.

This is a recipe I had as a kid growing up in Michigan. It is a r-e-a-l-l-y good cookie. And because it has jam in it, I of course eat it for breakfast!
